Dairy-Free Pumpkin Spice Ice Cream (serves 2-3)

4 dates, soaked and drained

heaping 1/2 cup organic pumpkin puree (like this)

1/2 cup full-fat coconut milk (like this)

1 tablespoon pure maple syrup (optional)

1/2 tablespoon ceylon cinnamon (like this)

1/2 teaspoon ginger

1/2 teaspoon nutmeg

1/4 teaspoon cloves

1/4 teaspoon allspice

2 sliced frozen bananas

1.Soak dates in hot water for five minutes, then drain.Place in food processor and puree into a paste. Add in pumpkin, coconut milk, maple syrup, and spices.

2. Once mixture is smooth and creamy, add in banana slices through the feed tube with the food processor running. Scrape down the sides if needed. The mixture should be completely creamy once combined.

3. Spread the mixture into a metal baking pan. Freeze for 2 hours, mixing every 30 minutes. Before serving, place ice cream back into food processor and mix untilit reaches a creamy, gelato-like texture. Then scoop, serve, and enjoy!
